To me, summer means flip-flops, beach days, and fresh strawberries from the farmers’ market. I love when I see the first batch of local, organic strawberries come in. They’re sweeter and bigger than the ones that are available year round. And, they’re quite a bargain when you purchase them by the half flat. This Summer Salad with Strawberries, Walnuts, and Mint is great for a light meal on the patio or by the pool. Serve it with a glass of organic vegan wine and you have an absolutely delightful dinner.
